Make these all damn day. Not just for breakfast!
Makes 8 pancakes
Ingredients:
2 1/2 pounds potatoes, peeled and grated
1 medium onion, peeled and diced
1 cup flour
4 Tbsp chopped parsley
6 Tbsp aquafaba
1 1/2 tsp salt
1/4 tsp of pepper
Directions:
Peel and grate the potatoes. Then, using a cheesecloth bag or a clean dish towel, squeeze out most of the liquid from the potatoes.
Add the diced onion, flour, parsley, aquafaba, salt and pepper to the potatoes and mix with a spoon or by hand to combine.
Heat oil to 375° F in a large skillet.
Using about 1/2 cup of the potato mixture at a time, flatten out in your hands to make a patty and gently set in the oil. Cook until golden brown, roughly 5 minutes on each side.
Serve them with vegan sour cream and applesauce. If you don't, I'm never talking to you again.
